Making Olives in Brine - Follow these steps

Collect unripe olives from your tree or buy them from
shop. The olives must be uniform in size and without cracks or spots.
Make a shallow incision on each olive to prevent splitting during storage.
Place the olives in a large bowl or bucket and cover them completely with water. Leave them to soak for 10-14 days, changing the water every day. This will help remove the bitterness of the olives.
After soaking, drain the olives and wash them with cold water to remove any bitter residues.
Fill sterilized glass jars with olives. You can alternate a layer of olives with a layer of lemon slices, garlic cloves, chili pepper or parsley to add additional flavor.
Prepare the brine. For each liter of water, dissolve 100 grams of salt. Make sure the salt is completely dissolved before proceeding.
Pour the brine into the jars so that the olives are completely covered. Make sure there are no air bubbles trapped.
Close the jars hermetically and store them in a cool, dark place for at least 1-2 months before consuming them. During this time, the olives will ferment slightly and develop the desired flavor.
After the fermentation time, you can enjoy your pickled green olives! Remember to keep them in the refrigerator once you open the jar.
