Tomato and Mozzarella Salad with Basil Pesto
Simple and good, easy to prepare, here is the tomato and mozzarella salad, which can be eaten as a single dish or as a side dish with meat.
Ingredients:
- 4 ripe tomatoes;
- 1 buffalo mozzarella;
- 1 bunch of basil;
- 50g of pine nuts;
- 50g of grated parmesan;
- 1 clove of garlic;

Extra virgin olive oil (Olio Asta);
- Salt and Pepper To Taste.;
How to Prepare the Tomato and Mozzarella Salad - Procedure
Wash and cut the tomatoes into thick slices. Also cut the mozzarella into similar slices.
In a blender, combine the washed and dried basil, the pine nuts, the parmesan, the garlic, a pinch of salt and pepper and a generous splash of
oil extra virgin olive oil. Blend until you obtain a creamy consistency.
Arrange the tomato and mozzarella slices on a serving plate, alternating them. Season with the basil pesto and add a drizzle of extra virgin olive oil.
Serve the salad as an appetizer or as a fresh and tasty side dish.
